Banana Breakfast Doughnuts

Ready... Breaky... GO! Imagine a world where eating doughnuts for breakfast is completely acceptable! Well grab your aprons and go bananas with these delightful doughnuts.

Ingredients

- 2 Eggs
- 225g GF Rolled oats - blended to make oat flour
- 1 tsp Bicarbonate soda
- 1 tsp Cinnamon
- Pinch of salt
- 4 Very ripe medium bananas
- 76g Unsalted butter or coconut oil - melted
- 112g Maple syrup or honey
- 1 tsp Vanilla extract
- 80g Dark chocolate chips or cacao nibs
- A few tbsp Defence peanut butter

Method

Step 1

Grease the doughnut moulds with a little coconut oil and set aside. Mix all the dry ingredients together in a large bowl.

Step 2

In a separate bowl, mash your bananas then add all the wet ingredients including the mashed bananas into the dry bowl. Once combined, slowly stir in the chocolate chips.

Step 3

Using a piping bag, or a spoon fill the doughnut moulds with the mixture.

Step 4

Drizzle the tops with your chosen Knottys nut butter.

Step 5

Bake for 10-15 minutes, or until cooked through. Depending on your mould size they might need a little longer so keep checking 3 minutes at a time.

Step 6

Leave to cool before topping with more of your favourite Knottys Nut Butter.
