Coconut Satay Chicken Poke Bowl

Traditionally Poke is a native Hawaiian dish served with fish, but we've given it the good old Knottys twist! 

Ingredients

- 2 chicken breasts, butterflied and cut all the way through
- 3 tsp Knottys Energise Nut Butter, mixed with some cold water to loosen
- 1 tsp lime juice
- 1/2 red chilli
- 1 tsp grated ginger (frozen or fresh)
- 40g desiccated coconut
- 1 tbsp coconut oil

Could also be served in a wrap, pitta, pasta... the list is endless! Making it perfect for meal prepping.

Method

Step 1

Mix together the watered down Knottys Energise Nut Butter with the lime juice, red chilli, and ginger.

Step 2

Pour over cut chicken breasts, and mix until coated. This can be done and left for a few hours in the fridge to marinade further.

Step 3

Sprinkle desiccated coconut onto a flat plate, and coat the chicken breasts on both sides.

Step 4

Pan fry in coconut oil to secure the batter - 4 minutes each side on a high heat. Then place in a 180c preheated oven for 10 minutes to ensure chicken is cooked through.

Step 5

Serve with anything desired! I served mine with spinach, rocket, coconut rice, mango, avocado, sweetcorn, and peppers.

Step 6

Top with extra peanut sauce with the chilli and ginger and lime juice.
