Sourdough BBQ Pizza

Did someone say pizzaaaaaaaaaaa!

Ingredients - For two

For the BBQ Chicken -

- 2 chicken breasts
- 2 tbsp BBQ sauce
- 3 tbsp Knotty's Gut Friendly Peanut Butter
- 1 tbsp ginger puree
- Black pepper for seasoning
- 200ml water

Optional Pizza Toppings -

- Cheddar Cheese
- Mozzarella
- Mushrooms
- Sweetcorn
- Spinach

Method

Step 1

In a pan, add the BBQ sauce, 2 tbsp peanut butter, ginger puree, and water. Place chicken breasts in this liquid, and bring to the boil. Simmer with a lid on the pan for 20 minutes. After this time, check the chicken is cooked through and remove from the pan. Shred with two forks. Add in the final tbsp of nut butter, and simmer until thickened. Add in the shredded chicken to this sauce and you're ready to go!

Step 2

Top your pizza base with tomato puree, mozzarella & cheddar cheese.

Step 3

Add on your other fresh ingredients, such as sweetcorn & mushroom.

Step 4

Top with your shredded BBQ chicken.

Step 5

Cook your pizza following your base guidelines. Slice & enjoy!
