Tofu Massaman Curry

A fusion of Thai- and Indian-style curries that works so well with our savoury gut friendly butter!

Ingredients

- 1 red pepper, deseeded and sliced
- 2 small sweet potatoes (or 1 big one)
- 225g tofu, roughly cubed
- 1.5 tbsp massaman curry paste
- 400ml coconut milk
- 200ml vegetable stock
- 2x kefir lime leaves
- Approx 150g green beans
- 1 tbsp Knottys Nutri-Butter Gut Friendly Peanut
- 1 tbsp coconut oil

Spice it up!

Add some deseeded red chilli to liven things up!

Method

Step 1

Add your red pepper and sweet potato to a large pan, and fry with coconut oil for 4-6 minutes until edges of sweet potato are beginning to soften slightly.

Step 2

Then add your tofu cubes and massaman curry paste and fry for a further 3-5 minutes until spices begin releasing their aroma.

Step 3

Add your coconut milk and vegetable stock, and then leave to simmer for 10 minutes or until your sweet potato is nearly cooked. At this point you can also add the two kefir lime leaves, and seasoned with salt and pepper.

Step 4

Add green beans and Knottys Nutri-Butter Gut Friendly Peanut and cook for another few minutes. If the sauce isn't to your desired consistency, add some cornflour to thicken your sauce.

Step 5

Serve with your desired rice, top with some fresh coriander and peanuts!
