PB Mash
Pie
Serves 4-6
Ingredients
2 Sweet Potatoes (chopped into chunks)
1 Onion (diced)
3 Celery sticks
1 tin of plum tomatoes
1 tin cannelloni beans
5 White Potatoes (chopped into chunks)
2 tsps rosemary
2 cloves garlic
2 tsps chilli flakes
2 tbsp Gut Friendly PB
Dash of milk
Salt & Pepper to taste
Method
Boil and mash white potatoes, set aside.
Whilst boiling put all other ingredients into a large saucepan and mix. Season well.
Cover and simmer gently for 30mins till cooked through and potato is soft.
Add PB & a dash of milk to the mash and stir well. Season.
Pour cooked veg into an overproof dish and top with mash.
Bake in the over for 10-15mins until golden brown.
