PB Mash
Pie

Serves 4-6

Ingredients

  • 2 Sweet Potatoes (chopped into chunks)

  • 1 Onion (diced)

  • 3 Celery sticks

  • 1 tin of plum tomatoes

  • 1 tin cannelloni beans

  • 5 White Potatoes (chopped into chunks)

  • 2 tsps rosemary

  • 2 cloves garlic

  • 2 tsps chilli flakes

  • 2 tbsp Gut Friendly PB

  • Dash of milk

  • Salt & Pepper to taste

Method

  1. Boil and mash white potatoes, set aside.

  2. Whilst boiling put all other ingredients into a large saucepan and mix. Season well.

  3. Cover and simmer gently for 30mins till cooked through and potato is soft.

  4. Add PB & a dash of milk to the mash and stir well. Season.

  5. Pour cooked veg into an overproof dish and top with mash.

  6. Bake in the over for 10-15mins until golden brown.
